Ingredients

small radishes, thinly sliced
- 2
scallions, thinly sliced into matchsticks
- 1
small carrot, peeled into ribbons
- 4 Tbsp.
fresh lime juice, divided
- 1/4 cup
mint leaves
- 3 Tbsp.
mayonnaise
- 1 Tbsp.
gochujang
- 1 1/2 lb.
frozen cooked large peeled and deveined shrimp, thawed
- 4
split top hot dog rolls, toasted
Directions
- Step 1In medium bowl, toss radishes, scallions, and carrot with 2 tablespoons lime juice; fold in mint leaves.
- Step 2In a large bowl, whisk together mayonnaise, 2 tablespoons lime juice, and gochujang. Remove and discard tails from shrimp; toss with sauce. Fill buns with shrimp mixture and top with carrot ribbon salad.
