Pesto Chicken Salad Croissants

Ingredients
- 1/2 cup
plain yogurt
- 1/4 cup
pesto
- 2 tsp.
lemon zest plus 1 Tbsp juice
Kosher salt
Pepper
- 3 cups
shredded rotisserie chicken
- 1/3 cup
sliced toasted almonds
- 6
croissants, split and toasted
Baby arugula and sprouts, for serving
Directions
- Step 1In large bowl, whisk together yogurt, pesto, lemon zest and juice and 1/4 teaspoon each salt and pepper. Fold in chicken and almonds.
- Step 2Divide arugula and chicken salad among croissants and top with sprouts.
