Ingredients
- 2 cups sugar
- 1/2 cup water
- 2 Tbsp. light corn syrup
- 1 cup heavy cream, warmed
- 4 Tbsp. salted butter, softened
- 1 tsp. vanilla extract
- 1/2 tsp. salt
Directions
- Step 1In 4-quart saucepan with candy thermometer attached, stir together sugar, water and light corn syrup. With pastry brush dipped in water, brush any sugar crystals off side of pan. Heat to boiling on medium-high without stirring, about 3 minutes. Boil until dark amber (320 degrees F to 345 degrees F on candy thermometer), about 9 minutes.
- Step 2Working quickly, remove pan from heat and add heavy cream (caramel will steam and bubble up) and butter, stirring until smooth.
- Step 3Let caramel cool slightly. Stir in vanilla extract and salt. Let cool completely. Store at room temperature up to 1 month or in refrigerator up to 2 months. Reheat in microwave 1 minute before serving.
