These pumpkin cake donuts glazed with a groovy-spooky tie-dye icing require no frying. Simply bake them in donut pans.

Ingredients
For donuts
- 2 cups
all-purpose flour
- 2 tsp.
pumpkin pie spice
- 1 1/2 tsp.
baking powder
- 1/4 tsp.
baking soda
- 1/2 tsp.
kosher salt
- 1
15-ounce can pure pumpkin puree
- 3/4 cup
firmly packed brown sugar
- 1/4 cup
canola oil
- 1/4 cup
whole milk
- 1 1/2 tsp.
pure vanilla extract
- 2
large eggs
For glaze
- 3
large egg whites
- 1/2 tsp.
cream of tartar
- 1 lb.
confectioners’ sugar
Gel food coloring
Directions
- Step 1Heat oven to 350ºF. In large bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
- Step 2Using electric mixer, in large bowl, beat pumpkin, sugar, oil, milk, vanilla, and eggs until smooth.
- Step 3Gradually add flour mixture to pumpkin mixture and mix until just combined.
- Step 4Lightly oil donut pans and divide batter among holes, filling each about three-quarters of the way (Tbsp for mini and 1/2 cup for large). Bake until wooden pick inserted into centers comes out clean, 8 to 10 minutes for mini and 12 to 15 minutes for large. Carefully remove donuts while warm and transfer to wire rack to cool completely.
- Step 5Prepare glaze: Using mixer, beat egg whites and cream of tartar on medium-high speed until foamy, about 1 minute. Reduce speed to low; gradually add confectioners’ sugar until incorporated. On high speed, beat until medium-stiff glossy peaks form, 5 to 7 minutes.
- Step 6Add water 1 tsp at a time to icing to make it a drizzling consistency. Spoon 1/4 cup onto plate. Add a few drops of food coloring; swirl using wooden pick. Place donut top down directly into glaze, then slowly peel away to 1 side, turning upright, and let excess fall off. Transfer to wire rack until set. Repeat with remaining donuts, changing icing colors as desired and adding more icing as necessary.
