(1 stick) unsalted butter, at room temperature
- 1/3 cup
packed dark brown sugar
- 1/4 cup
granulated sugar
- 1
large egg
- 2 tsp.
pure vanilla extract
8 oz bittersweet chocolate, chopped
Directions
- Step 1Heat oven to 350°F. Lightly coat an 8-inch square pan with cooking spray. In a medium bowl, whisk together the flour, baking powder and salt.
- Step 2Using an electric mixer, beat butter and sugars until light, 2 minutes. Beat in egg and then vanilla.
- Step 3Reduce the speed to low and gradually add the flour mixture, beating until incorporated; fold in 2/3 of chocolate.
- Step 4Spread the batter into the prepared pan and top with remaining chocolate. Bake until beginning to brown around edges, 15 to 18 minutes.
- Step 5Let the blondies cool completely in the pan before cutting into pieces.
