Ingredients
For cookie
- 3/4 cup
all-purpose flour
- 1/3 cup
unsweetened cocoa powder
- 1/4 tsp.
baking soda
- 1/4 tsp.
kosher salt
- 4 Tbsp.
unsalted butter, at room temp
- 1/4 cup
sugar
- 1
large egg
- 1 tsp.
pure vanilla extract
For topping
- 1 lb.
white chocolate, chopped

Directions
- Step 1In a medium bowl, whisk together flour, cocoa powder, baking soda and salt. In a large bowl, using electric mixer, beat butter and sugar until light and fluffy, about 3 minutes. Beat in egg and then vanilla. Reduce mixer speed to low and gradually add flour mixture, mixing until just incorporated.
- Step 2Roll dough between 2 sheets parchment paper to about 1/8 inch thick. Slide dough onto baking sheet (remove and discard parchment) and chill until firm, at least 20 minutes.
- Step 3Heat oven to 350°F. Bake, rotating baking sheet halfway through, until cookie is set and darker along edges, 15 to 20 minutes. Let cool completely on wire rack.
- Step 4Once cool, place white chocolate in bowl and microwave at 50% power in 30-second increments, stirring in between, until melted and smooth. Spread all but 1/4 cup on top of cookie. Let set.
- Step 5Remelt remaining chocolate and drizzle over top, then before set, add candy eyes if desired. Let set. Cut or break into pieces before serving.
