Ingredients
- 1/2 cup
all-purpose flour
- 2 Tbsp.
sugar
- 1/4 tsp.
baking powder
- 1/8 tsp.
kosher salt
- 1/3 cup
whole milk
- 2 Tbsp.
unsalted butter, melted
- 1 tsp.
pure vanilla extract
- 1 tsp.
finely grated lemon zest
- 1/4 cup
fresh or frozen blueberries (frozen blueberries retain their shape better than fresh)
Directions
- Step 1In a 12-ounce mug, whisk together flour, sugar, baking powder, and salt. Stir in milk, butter, vanilla, and lemon zest. Fold in blueberries. Microwave on High until just cooked through, 90 seconds to 2 minutes.
