Broccoli gets a bad rap, but its no myth that it has beaucoup health benefits and deserves to be a go-to side for quick and healthy dinners.
While many vegetables are fine to buy frozen, we recommend buying fresh broccoli when your plan is to roast it. Look for broccoli with firm stems and florets. (Yellow, limp florets and damp or decayed leaves are telltale signs that the broccoli is starting to spoil.)
We also suggest keeping roasted broccoli in the fridge for one or two days max. Even though it won't spoil, the broccoli won't hold as much flavor after three days. Catch our roast recipe below — and when you're ready to switch things up, know that it can also be steamed, shaved, or puréed!
