Ingredients
- 3 cups long-grain rice
- 2 Tbsp. olive oil
- 1/4 cup minced shallots
- 3 poblano peppers
- 3 can cans of chicken broth
- 1 can diced tomatoes
- 2 cups Cheddar cheese
Directions
- Step 1Cook long-grain rice according to directions on package.
- Step 2In a deep nonstick pot, heat olive oil over medium-high heat. Sauté minced shallots and poblano peppers until tender, about 3 to 5 minutes. Stir in chicken broth and diced tomatoes; bring to a boil.
- Step 3Add the cooked long-grain rice and Cheddar cheese. Cook a bit longer, stirring continuously, until the cheese has melted.
