Ingredients
- 4 package frozen chopped spinach
- 2 Tbsp. butter
- 1 medium shallot
- 1 tsp. salt
- tsp. black pepper
- 1 pinch nutmeg
- 1 cup heavy cream
Directions
- Step 1Thaw spinach in microwave according to package directions. Drain well, reserving � cup spinach liquid.
- Step 2Meanwhile, in a nonstick 12-inch skillet, melt butter over medium-low heat. Add shallot and saut� until tender, about 10 minutes, stirring frequently.
- Step 3Increase heat to medium; add spinach, reserved spinach liquid, salt, pepper and nutmeg; cook, stirring occasionally, 5 minutes, or until spinach is tender. Raise heat to medium-high. Stir in cream and bring to a boil; cook 3 to 5 minutes, until cream is slightly thickened. Transfer to a bowl to serve.
