This easy polenta tastes rich and hearty — even when made with low-fat milk and water — and is the perfect foil for our Seared Scallops with Olive and Tomato Compote.

Ingredients

  • 2 1/4 cups boiling water
  • 1 cup low-fat (1%) milk
  • 3/4 cup yellow cornmeal
  • 1 1/2 tsp. salt

Directions

    1. Step 1In deep 2 1/2-quart microwave-safe bowl or casserole, stir boiling water, milk, cornmeal, and salt. Cover with waxed paper and cook in microwave on High 5 minutes.
    2. Step 2Remove bowl from microwave and whisk mixture vigorously until smooth (mixture will be lumpy at first). Microwave, covered, on High 2 to 3 minutes longer or until thickened, whisking once after cooking is over. Makes 3 cups.
