This easy and fast Red Beans and Rice recipe calls for home-cooked red beans, which yield the best flavor and texture. Brands of Cajun seasoning vary in sodium content — some are salt-free. Our recipe calls for only 1/4 teaspoon of salt. Taste the mixture at the end of step 3; add more salt if needed.

Ingredients

  • 1 cup long-grain white rice
  • 2 slice bacon
  • 1 small onion
  • 2 stalk celery
  • 1 green pepper
  • 2 clove garlic
  • 2 tsp. Cajun seasoning
  • 1/2 tsp. dried thyme
  • 1/4 tsp. salt
  • 2 1/2 cups Home-Cooked Beans
  • 1/4 tsp. cayenne pepper sauce

Directions

    1. Step 1Prepare rice as label directs.
    2. Step 2Meanwhile, in 12-inch nonstick skillet, cook bacon on medium until browned. With slotted spoon, transfer bacon to paper towels to drain.
    3. Step 3To bacon fat in skillet, add onion, celery, green pepper, garlic, Cajun seasoning, thyme, and salt. Cook 10 to 12 minutes or until vegetables are tender, stirring occasionally. Stir in beans and reserved bean cooking water, bacon, and cayenne pepper sauce. Cook 3 to 5 minutes longer to blend flavors.
    4. Step 4Serve bean mixture over rice.
