Serve this crispy romaine lettuce salad as a low-calorie way to up the vitamin content of any meal.

Ingredients
- 1 Kirby (pickling) cucumber
- 1 large head romaine lettuce
- 2 medium carrots
- cup light mayonnaise
- 2 Tbsp. red wine vinegar
- 1 small clove garlic
- 1/4 tsp. dried tarragon
- salt and pepper
Directions
- Step 1Cut unpeeled cucumber lengthwise in half, then crosswise into paper-thin half-moons. Coarsely slice lettuce. In large serving bowl, place cucumber and lettuce. With vegetable peeler, shave carrots directly into bowl with lettuce.
- Step 2In small bowl, whisk together mayonnaise, vinegar, garlic, tarragon, 1/4 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper. Add to bowl with lettuce and vegetables; toss to coat.
