Ingredients
- 4 Tbsp. butter
- 2 Tbsp. shallots
- 2 cups corn kernels
- 1 can pumpkin
- 4 cups half-and-half
- 2 1/2 cups cornmeal
- 1 Tbsp. fresh sage
- Salt and freshly ground pepper
- 1/4 pumpkin seeds
Directions
- Step 1In a large saucepan over medium heat, melt butter until it begins to brown slightly. Add shallots and corn, and sauté for 4 minutes, stirring occasionally.
- Step 2Add pumpkin and half-and-half to the pan, slowly stirring to combine. Bring to a simmer.
- Step 3Slowly add cornmeal, stirring constantly. Reduce heat to medium-low and cook for 6 to 7 minutes.
- Step 4Add sage and continue to stir until the pudding is thick (the consistency of oatmeal). Season with salt and pepper to taste.
- Step 5Spoon pudding into a serving bowl and garnish with pumpkin seeds.
