Ground Turkey and Snap Pea Pasta
This pasta packs in plenty of protein!

Pack tender-crisp snap peas along with 25 grams of protein per serving in this quick, easy pasta dish. It’s light and bright with lemon and fresh herbs.
Ingredients
- 12 oz.
campanelle pasta
- 8 oz.
snap peas, trimmed and sliced into thirds on bias
- 2 Tbsp.
olive oil
- 1
large shallot, chopped
- 8 oz.
ground turkey (94% lean)
- 2
cloves garlic, chopped
- 1/4 cup
dry white wine
- 1 tsp.
lemon zest plus 1 1/2 tablespoons lemon juice
- 1/2 cup
flat-leaf parsley leaves, chopped
- 1 oz.
Parmesan cheese, grated (1/4 cup), divided
- 1/4 cup
basil leaves, chopped
Directions
- Step 1Cook pasta per package directions. In final minute of cooking, add snap peas and cook 1 minute. Reserve 1 cup pasta water, then drain.
- Step 2Heat 2 tablespoons oil in large skillet on medium. Add shallot and cook, stirring occasionally, until beginning to soften, 2 to 3 minutes. Add ground turkey, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, breaking up into small pieces, until nearly cooked through, 5 to 6 minutes. Stir in garlic and cook 1 minute more. Add wine and lemon juice and simmer 1 minute. Stir in parsley and lemon zest.
- Step 3Toss in pasta and snap peas, 1/2 cup reserved pasta water (adding more if pasta seems dry), and Parmesan. Fold in half of basil. Serve topped with remaining basil, additional lemon zest, additional Parmesan, and drizzle of olive oil if desired.
