Citrus-Marinated Chicken Skewers
The secret to serious flavor? Whole lemons and clementines (rinds and all).

You’ve paid for the whole citrus, rind and all, so why not make the most of it? All the ingredients are pureed with olive oil in a blender. The result? A fast-acting marinade that needs just 30 minutes on chicken (or pork) for the most tender and flavorful grilled meat.
Ingredients
For citrus-garlic oil
- 6
cloves garlic
- 2
small lemons, halved and seeded
- 2
small clementines, halved and seeded (if necessary)
- 1 cup
olive oil
For chicken
- 1 1/2 lb.
boneless, skinless chicken breast, cut into 1½-inch pieces
- 1/2 cup
citrus-garlic oil
Kosher salt and pepper
Directions
- Step 1In blender, puree garlic, lemons, and clementines (rind and all) with oil until smooth. Strain through fine-mesh sieve into jar and discard solids. Refrigerate oil for up to 2 weeks.
- Step 2In large bowl, toss chicken with 1/2 cup citrus-garlic oil and ½ teaspoon each salt and pepper. Refrigerate for 30 minutes. Thread onto skewers and grill on medium, turning occasionally, until slightly charred and cooked through, 8 to 11 minutes.
TIP: You can also marinate pork with the citrus-garlic oil. Swap in the same amount of pork loin and prepare and cook as directed.
