Ingredients
1cup
whole milk
1
¼-ounce package active dry yeast
2Tbsp.
honey, divided
23/4cups
all-purpose flour, plus more for dusting
11/2tsp.
kosher salt
6Tbsp.
unsalted butter, cut into small pieces, at room temperature, divided, plus more, melted, for brushing
Canola oil, for greasing
Flaky sea salt, for sprinkling
Directions
Step 1In liquid measuring cup, microwave milk until warm to the touch, 30 to 45 seconds. Stir in yeast and 11/2 tablespoons honey and let sit until frothy, about 10 minutes.
Step 2 In large bowl, whisk together flour and salt; make well in center and add milk mixture and 3 tablespoons chopped butter. Using wooden spoon, gently stir until shaggy dough forms. Transfer to lightly floured work surface and knead (if dough is sticky, add more flour 1 teaspoon at a time) until smooth and tacky, 6 to 7 minutes.
Step 3Transfer dough to lightly oiled large bowl and cover with plastic wrap. Set in warm place and let rise until doubled in volume, 45 minutes to 1 hour.
Step 4Brush 8-inch square metal baking pan with melted butter. Cut dough into 16 pieces and, working with 1 piece at a time, roll into ball and transfer to prepared pan, seam side down. Cover with plastic wrap and let rise until puffed and dough does not bounce back when gently poked with a finger, about 30 minutes. Meanwhile, heat oven to 350°F.
Step 5In small bowl, microwave remaining 3 tablespoons butter with remaining 1/2 tablespoon honey; stir to combine. Gently brush half of honey butter on top of rolls. Bake, brushing with remaining honey butter halfway through, until puffed and lightly golden brown, 38 to 42 minutes. Sprinkle with flaky sea salt if desired.
