Avocado Chicken Salad Clubs
This stacker is epic enough for game day.

Consider these stacked sandos your upgraded diner classic: Shredded rotisserie chicken folded into mashed avocado is layered with crispy bacon, lettuce, and tomato between basil mayo-slathered bread.
Ingredients

shredded rotisserie chicken
- 1
avocado, mashed
- 3
scallions (green parts only), thinly sliced and divided

lemon zest plus 1 Tbsp lemon juice

mayonnaise
- 1/4 cup
basil leaves, roughly chopped

slices white bread, toasted

slices bacon (12 oz), cooked

slices tomato (from about 2 tomatoes)
- 4
large green-leaf lettuce leaves
Directions
- Step 1In large bowl, stir together chicken, avocado, half of scallions, lemon juice, and 1/2 teaspoon salt. In small bowl, stir together mayonnaise, lemon zest, basil, and remaining scallions.
- Step 2On work surface, place 4 slices of toast and spread with one-third of basil mayonnaise (about 1/4 cup), then top with chicken salad. Cover with 4 more slices of toast and spread with half of remaining basil mayonnaise (about 1/4 cup), then top each sandwich with 3 slices of bacon, 2 slices of tomato, and 1 lettuce leaf.
- Step 3Spread remaining 4 slices of toast with remaining basil mayonnaise (about 1/4 cup) and use to cover bacon, lettuce, and tomato, mayo side down. Secure sandwiches with toothpicks, then cut each into quarters. (Be sure to remove toothpicks before eating.)
