This super refreshing summer spritz will instantly transport you to a picture-perfect setting surrounded by the lushest greenery. Made with cooling cucumbers and tart lime juice, it has a botanical intrigue reminiscent of gin, thanks to chilled chamomile tea. The drink shines on its own sans alcohol, but you can add a splash of gin to boost the garden vibes.

Ingredients

chamomile tea bags
- 1/2 cup
sugar

long English cucumber
- 2
strips lime zest plus 2 lime wheels, for garnish
- 1/2 cup
fresh lime juice

club soda, chilled
- 2
thyme sprigs, for garnish
Directions
- Step 1Bring 1 cup water to a boil in small saucepan. Remove from heat. Add tea bags and sugar and stir until sugar dissolves. Let steep 10 minutes. Strain, squeezing tea bags, into liquid measuring cup; discard tea bags. Let tea cool to room temperature, about 15 minutes.
- Step 2Meanwhile, cut 4 round slices from cucumber and set aside. Using vegetable peeler, thinly shave 4 lengthwise slices from remaining cucumber (you will have cucumber left over). Wrap 2 slices decoratively inside each of 2 tall glasses, at least 16 ounces each. Transfer to freezer.
- Step 3In large cocktail shaker, muddle lime zest and reserved cucumber slices with 2 ounces cooled chamomile tea. Add lime juice and remaining tea; fill with ice and shake until shaker is frosty. Strain into prepared glasses over ice and gently stir in club soda, then garnish with lime wheels and thyme sprigs.
Get into the spirit! To turn this drink into a cocktail, add 4 oz of gin with the lime juice and tea in Step 3.
