For an almost electric blue, we whisk in a little bit of spirulina powder. It takes this refreshing pitcher drink to stunning, ocean-hued heights.

Ingredients

chamomile tea bags (see Tea Tip)
- 3/4 cup
sugar

to 2 teaspoons blue spirulina powder
- 1
long English cucumber

strips lime zest plus 6 lime wheels, for garnish
- 3/4 cup
fresh lemon juice, divided
- 3/4 cup
fresh lime juice, divided
Ice
- 36 oz.
club soda, chilled, divided
- 6
thyme sprigs, for garnish
Directions
- Step 1Bring 3 cups water to a boil in medium saucepan. Remove from heat. Add tea bags and sugar and stir until sugar dissolves. Let steep 10 minutes. Strain, squeezing tea bags, into liquid measuring cup; discard tea bags. Whisk in spirulina powder. Let tea cool to room temperature, about 15 minutes.
- Step 2Meanwhile, cut 12 round slices from cucumber and set aside.
- Step 3In large cocktail shaker, muddle 2 strips lime zest and 4 cucumber slices with 2 oz cooled chamomile tea. Add 1/4 cup lemon juice, 1/4 cup lime juice. and 6 oz tea; fill with ice and shake until shaker is frosty. Strain through coffee filter into pitcher (to eliminate any blue specks). Repeat shaking and straining 2 more times. Serve in glasses over ice, gently stir 6 ounces club soda into each glass, then garnish with lime wheels and thyme sprigs.
TEA TIP: For the brightest blue, we used tea made from whole chamomile flowers instead of crushed ones, such as Teapigs.
