Ingredients

piece center-cut salmon fillets
- 1/4 tsp.
salt
Directions
- Step 1Place salmon fillets in 8- by 8-inch glass baking dish; sprinkle with 1/4 teaspoon salt.
- Step 2Add 1/4 cup water to dish.
- Step 3Cover and cook in microwave on high 8 minutes or until fish just turns opaque throughout and flakes easily when tested with a fork.
- Step 4With slotted wide metal spatula, remove salmon from baking dish and drain over paper towels.
- Step 5Place salmon on platter; keep warm.
This cooking method can be adapted for other varieties of fish, from cod to red snapper. Just bear in mind that the size and thickness of the fish will have an effect on the final cooking time. For an added hint of flavor, add parsley leaves, celery leaves, lemon slices, whole peppercorns or carrot slices to the poaching liquid.
