Spiced Lamb (or Beef!) Dumplings

Inspired by a traditional Turkish dish, you can fill these spicy dumplings with lamb or beef. Balance the spicy flavor with a two-ingredient Garlic-Yogurt Sauce.

Ingredients
Spicy Lamb Dumplings
- 1 lb. ground lamb or ground beef
- 1/4 cup flat-leaf parsley, finely chopped
- 1/4 cup mint, thinly sliced
- 1 tsp. ground cumin
- 1 tsp. sweet paprika
- Kosher salt
- Square dumpling wrappers (about 30)
Garlic Yogurt Sauce
- 1 cup whole-milk Greek yogurt
- 2 garlic cloves (grated)
- 1/4 tsp. salt
Directions
- Step 1Make filling: Combine lamb, parsley, mint, cumin, sweet paprika, and salt.
- Step 2Place 1 rounded tablespoon filling in center of 1 wrapper. Using your fingers, lightly wet edges of wrapper with water. Fold in all four corners to make a point, then firmly press all edges together to fully seal dumpling. Transfer sealed dumpling to floured or parchment-lined baking sheet. Repeat with remaining filling and wrappers.
- Step 3Add 1 tablespoon salt to large pot of simmering water. In 3 batches, cook dumplings, stirring, until filling is cooked through, 3 to 6 minutes. Using slotted spoon, transfer to paper-towel-lined plate.
- Step 4Make Garlic-Yogurt Sauce: Whisk together yogurt, garlic, and salt. Serve with lamb dumplings
