Ingredients

Cheesy Poppy Seed Dough

  • 1 1/4 cups all-purpose flour
  • 1/4 cup finely grated Cheddar cheese
  • 1/4 cup finely grated Parmesan
  • 1 Tbsp. poppy seeds
  • 1/2 tsp. Kosher salt
  • 1/2 cup cold unsalted butter, cut up (1 stick)
  • 1 Tbsp. distilled white vinegar
  • 1 Tbsp. ice-cold water, plus 1 to 2 teaspoon if necessary

Cheesy Poppy Seed Crackers

  • 1/4 cup grated Cheddar cheese

Directions

    1. Step 1Make Cheesy Poppy Seed Dough: In food processor, combine flour, Cheddar and Parmesan cheeses, poppy seeds and salt. Add butter and pulse until mixture resembles coarse crumbs.
    2. Step 2Add vinegar and 1 tablespoon ice-cold water, pulsing until dough is crumbly but holds together when squeezed (if necessary, add remaining water, 1 teaspoon at a time). Do not overmix.
    3. Step 3Transfer dough to piece of plastic wrap and shape into 1-inch-thick disk. Wrap tightly and refrigerate until firm, at least 1 hour and up to 2 days.
    4. Step 4Make Cheesy Poppy Seed Crackers: Heat oven to 400°F. Roll Cheesy Poppy Seed Dough between 2 sheets of parchment to ⅛ inch thick. Transfer to baking sheet; remove top piece of parchment. Prick all over with fork and sprinkle with Cheddar.
    5. Step 5Bake until golden brown, 18 to 20 minutes. Let cool on wire rack. When cool, break into pieces to serve.
