Sheet Pan Gnocchi and Peppers with Thyme Frico

This colorful, mosaic-like sheet pan meal is almost too pretty to eat: Peppers, tomatoes, gnocchi, and garlic are roasted together, then dotted with ricotta and crispy shards of baked Parm. Ingredients
- 1 lb.
baby peppers, halved lengthwise and seeded
- 2 Tbsp.
olive oil, divided
Kosher salt and pepper

17.5-oz package shelf-stable gnocchi
- 1 cup
cherry or grape tomatoes
- 6
cloves garlic, smashed
- 1/2 cup
grated Parmesan cheese
- 2 tsp.
thyme leaves
Pinch of red pepper flakes
- 1/2 cup
ricotta cheese
- 1/4 cup
flat-leaf parsley leaves, chopped, plus more for serving
Directions
- Step 1Heat oven to 425°F. In large bowl, toss peppers with 1 tablespoon oil and 1/4 teaspoon each salt and black pepper. Transfer to Good Housekeeping Large Rimmed Baking Sheet or other rimmed baking sheet. Roast until slightly brown on edges, 10 minutes.
- Step 2Meanwhile, in same large bowl, toss gnocchi, tomatoes, and garlic with remaining tablespoon oil and 1/4 teaspoon each salt and black pepper. Add to peppers on same baking sheet and roast until gnocchi and peppers are golden brown and tender, 20 to 22 minutes more.
- Step 3Meanwhile, make frico: divide Parmesan between 2 Good Housekeeping Micro Sheet Pans or 1 small parchment-lined baking sheet. Sprinkle each with half of thyme and red pepper flakes. Roast until Parmesan is golden brown and crisp, 4 to 5 minutes. Let cool until ready to use.
- Step 4In small bowl, combine ricotta, parsley, and a pinch each of salt and black pepper. Dollop over gnocchi and vegetables. Break frico into pieces and scatter over gnocchi and vegetables. Serve sprinkled with additional parsley if desired.
