Chips and Roe Is the High-Low Mashup Your Dinner Party Is Missing
It turns out potato chips are the perfect vessel for the fancy snack.

For a fun way to get in on the caviar craze, dollop lemony, chive-flecked crème fraîche and salmon roe (which is often less expensive than caviar!) on a platter of crunchy potato chips.
Ingredients
- 1/2 cup
crème fraîche
- 1 tsp.
finely grated lemon zest
- 2 Tbsp.
finely chopped chives, plus more for sprinkling
- 1
8-oz bag kettle-cooked potato chips (we used Cape Cod)
- 2
to 3 oz salmon roe
Cracked pepper, for serving
Directions
- Step 1In small bowl, stir together crème fraîche, lemon zest, and chives.
- Step 2Arrange chips on large serving platter (or 2 smaller ones). Top with dollops of crème fraîche mixture followed by roe. Sprinkle with additional chives and cracked pepper if desired.
