Manchego Devils on Horseback
Perfect for a cocktail party.

These dates are stuffed with Manchego and pepperoncini, wrapped with salty strips of prosciutto, and brushed with a maple vinegar glaze for an irresistible, one-bite party app that’ll have guests raving all night long.
Ingredients

sherry vinegar
- 2 tsp.
pure maple syrup
- 1 tsp.
olive oil

Medjool dates (12 oz.), split open and pitted

4-oz. block Manchego cheese, cut into 24 equal pieces
- 1/3 cup
sliced pepperoncini
- 6
thin slices prosciutto (about 3 oz.), cut lengthwise into 1-inch-wide strips
Directions
- Step 1Heat oven to 400°F. Line rimmed baking sheet with parchment paper; insert wire rack.
- Step 2In small bowl, stir together vinegar, maple syrup, and oil.
- Step 3Stuff each date with 1 piece Manchego and 1 slice pepperoncini, then wrap with 1 strip prosciutto. Place, seam sides down, on prepared wire rack.
- Step 4Bake until cheese begins to soften, 6 minutes. Brush with vinegar mixture and bake until prosciutto is crispy and cheese is melted and warm, 6 minutes more.
