Jam Parfaits with Grilled Peaches

Ingredients
- 2 Tbsp. lemon juice
- 2 Tbsp. strawberry or raspberry jam
- 1 cup raspberries
- 1 cup blackberries (halved if large)
- 4 peaches
- 2 Tbsp. olive oil
- 1 cup heavy cream
- 1 cup plain full-fat Greek yogurt
Directions
- Step 1In large bowl, whisk together lemon juice and strawberry or raspberry jam. Add raspberries and blackberries; toss to coat. Let stand at least 5 minutes, tossing occasionally.
- Step 2Cut peaches into halves; discard pits. Brush cut sides with olive oil; grill on medium until grill marks appear, about 3 minutes per side.
- Step 3In another large bowl, with stand mixer with whisk attachment or with hand mixer, beat cold heavy cream and Greek yogurt until soft peaks form.
- Step 4Spoon berries and yogurt cream into canning jars or glasses, alternating layers. Serve parfaits with peaches.
