Ingredients
- 1
refrigerated rolled pie crust (half 14.1-ounce package)
- 1
large egg, beaten with 1 teaspoon milk
- 1/4 cup
store-bought jam or No-Cook Jam (1 flavor or a combo), drained of liquid, divided
Sugar, for sprinkling
Directions
- Step 1Gently unroll pie dough, cut into 2 1/2-inch squares (you should have 9 squares total), and transfer to parchment-lined baking sheet.
- Step 2Place 1 teaspoon jam in center of each square. Pull 1 corner toward center, covering some jam; brush opposite corner with egg wash; then fold over, pressing gently to adhere. Brush overlapping corner with egg wash (do not egg-wash rest of dough). Sprinkle sugar over egg wash and space evenly. Freeze 20 minutes.
- Step 3Meanwhile, heat oven to 400ºF. Bake until pastry is golden brown and jam is bubbling, 17 to 20 minutes. Let cool on pan 1 minute, then transfer to wire rack to cool completely.
Draining the jam before using minimizes liquid from seeping into the crust during baking.
