Herbed Bulgur Salad

A quick, greens-packed pesto adds fresh flair to fluffy bulgur. It’s for pairing with your favorite protein for lunch or serving as a feel-good side dish.

Ingredients
- 3/4 cup
bulgur
- 2 1/2 cups
baby spinach
- 1 1/4 cups
flat-leaf parsley leaves
- 1
small bunch chives, roughly chopped (1/3 cup)
- 1/2 tsp.
ground cumin
- 1/3 cup
roasted almonds
- 1 Tbsp.
olive oil
Kosher salt
Directions
- Step 1In medium saucepan, bring 1 1/4 cups water to a boil. Stir in bulgur and simmer, covered, until nearly tender, 9 minutes. Remove from heat and let sit, covered, 3 minutes, then fluff with fork and transfer to large bowl.
- Step 2Meanwhile, in food processor, pulse spinach, parsley, chives, and cumin until finely chopped. Add almonds, oil, and 1/2 teaspoon salt and pulse to finely chop nuts. Fold into bulgur and serve immediately or at room temperature.
