Grilled Lemon-Lime Corn Salad

Ingredients
- 4
scallions
- 4
ears corn, shucked
- 1 Tbsp.
olive oil
- 1/4 cup
flat-leaf parsley leaves, chopped
- 1/4 cup
cilantro, chopped
- 1 tsp.
lemon zest plus 2 tablespoons lemon juice
- 1 tsp.
lime zest plus 1 tablespoon lime juice
Kosher salt and pepper
Directions
- Step 1Heat grill to medium-high. Thinly slice 2 inches of dark green parts from each scallion and set aside.
- Step 2Brush corn and remaining scallions with oil. Grill, turning occasionally, until tender and charred, 2 to 3 minutes for scallions; 3 to 5 minutes for corn. Transfer to cutting board.
- Step 3Thinly slice scallions and cut kernels from cobs; transfer to large bowl. Add herbs, zest and juices, reserved scallion greens, and 1/4 teaspoon each salt and pepper; toss to combine. Serve immediately or at room temperature.
