Ingredients
- 4
limes
- 2
small oranges
- 2
lemons
- 1/4 cup
sugar
- 1 1/4 oz.
envelope unflavored gelatin
- 1/2 cup
tequila blanco
- 1/4 cup
triple sec
Kosher salt, for serving
Directions
- Step 1Halve limes, oranges, and lemons lengthwise (from end to end) and juice, leaving rinds intact (you should get 1/2 cup each lime and orange juice and 1/4 cup lemon juice).
- Step 2Transfer juice to large liquid measuring cup. Using clean dishtowel, pull and discard fibers from inside rinds (flip rinds inside out to make it easier). Transfer each rind, cut side up, to well of muffin pan or small bowl.
- Step 3In small saucepan on medium, combine 3/4 cup citrus juice and sugar. Bring to a boil; then, whisking slowly, add gelatin and whisk to dissolve. Whisk in tequila, triple sec, and remaining 1/2 cup juice and pour mixture back into large measuring cup.
- Step 4Divide mixture among citrus rinds (you may have some mixture left over) and refrigerate until set, at least 12 hours, preferably up to 18 hours. Slice lemon and lime rinds in half lengthwise and orange rinds in thirds lengthwise. Serve with kosher salt for sprinkling.
