Matzo-Crusted Salmon with Glazed Radicchio

Ingredients
- 3 Tbsp. brown sugar
- 3 Tbsp. Hot sauce
- 3 Tbsp. maple syrup
- 3 Tbsp. olive oil
- 4 salmon fillets (5 oz. each)
- 2 medium heads radicchio, cut into 8 wedges
- 1 sheet matzo, broken up
- 3 Tbsp. Chopped parsley
- 1/4 cup golden raisins
- 1/4 cup walnuts, chopped
Directions
- Step 1Whisk brown sugar, hot sauce, maple syrup and olive oil until smooth. Arrange salmon fillets and radicchio on large rimmed baking sheet lined with foil; brush all over with maple syrup mixture. Sprinkle 1/2 teaspoon salt on salmon and radicchio.
- Step 2In food processor, pulse matzo until finely crushed; pulse in chopped parsley and 1 tablespoon olive oil. Pat crumbs onto salmon to make them adhere. Bake at 450°F 12 to 15 minutes or until salmon is cooked through. Top radicchio with golden raisins and walnuts.
