Spinach-Herb Polenta

Bright, savory Lemon Herb Butter lends richness and flavor to this creamy, comforting polenta that’s bolstered with chopped basil, grated Parmesan, and a few handfuls of spinach.

Ingredients
Kosher salt
- 1 cup
instant polenta
- 2 cups
baby spinach
- 4 Tbsp.
- 1/4 cup
basil leaves, chopped
- 2 Tbsp.
grated Parmesan cheese, plus more for serving
Directions
- Step 1In medium saucepan, combine 4 cups water with 1/2 teaspoon salt; bring to a boil. Add polenta and cook on low, whisking constantly, until thickened, 3 to 5 minutes. Stir in spinach and cook until wilted, 1 minute. Add butter, basil, and Parmesan; cook, stirring, 1 minute. Serve sprinkled with additional Parmesan.
