Ingredients

Chicken

  • 1

    medium onion, cut into 1/2" slices

  • 2 Tbsp.

    extra virgin olive oil

  • 1 Tbsp.

    ground coriander

  • 1/4 tsp.

    ground cinnamon

  • 1

    whole chicken (about 4 lbs.)

  • 2/3 cup

    walnuts, toasted

  • 1/2 cup

    packed fresh mint leaves, plus more for garnish

  • 1/4 cup

    packed fresh basil leaves

  • 1 Tbsp.

    lemon juice

  • 6

    flatbreads, toasted

Cabbage-Kohlrabi Slaw

  • 4 cups

    red cabbage, thinly sliced

  • 2

    small kohlrabi bulbs, peeled and cut into matchsticks

  • large jicama bulb, peeled and cut into matchsticks

  • 1

    seedless (English) cucumber

  • 1/2 cup

    packed fresh parsley

  • 2

    green onions, thinly sliced

  • 1/4 cup

    lemon juice

  • 1/3 tsp.

    salt

Directions

    1. Step 1Arrange onion in single layer toward center of bottom of 6- to 8-quart slow-cooker bowl. Combine oil, coriander, cinnamon and 1/2 teaspoon black pepper; rub all over and inside chicken. With butcher’s twine, tie drumsticks together. Sprinkle all over with 3/4 teaspoon salt. Place chicken on onion in slow-cooker bowl.
    2. Step 2 Cover and cook on High for 4 hours.
    3. Step 3While chicken is cooking, make Cabbage-Kohlrabi Slaw: Toss together red cabbage, kohlrabi (or jicama), cucumber, parsley, onions, lemon juice and salt.
    4. Step 4After 4 hours, transfer chicken to cutting board. In blender, puree 1 cup liquid from slow cooker with onion, walnuts, mint, basil, lemon juice and1/4 teaspoon salt until smooth. Serve chicken with herb sauce, flatbreads and Cabbage- Kohlrabi Slaw.
