This crowd-pleasing app is like pigs in blankets but filled with a quick homemade sausage instead of franks. They'll be a total knockout for game day. (Have we mentioned they’ll also make your kitchen smell amazing?). Dunk them in apple butter mustard for a *chef’s kiss* moment worth savoring.
Ingredients
- 2 tsp.
freshly grated nutmeg
- 2 tsp.
fennel seeds, lightly crushed
Kosher salt and pepper
- 1 lb.
ground pork
- 1
clove garlic, grated
- 1/4 cup
flat-leaf parsley leaves, chopped
- 4
sage leaves, chopped
- 2 tsp.
fresh thyme leaves
- 1/2 cup
panko
- 1
small Gala apple, peeled and coarsely grated (about 2/3 c.)
All-purpose flour, for dusting
- 1
14-oz pkg. puff pastry (2 sheets), thawed in fridge
- 1
large egg, beaten
- 1/4 cup
apple butter
- 3 Tbsp.
Dijon mustard
Directions
- Step 1In small bowl, combine nutmeg, fennel, 1 teaspoon salt and 1/2 teaspoon pepper. Spread pork out in large bowl to create large surface area. Rub pork with garlic, then break up meat into scraggly pieces and sprinkle with nutmeg mixture, then fresh herbs, panko, and grated apple. Using 2 forks, gently mix until just combined; refrigerate until ready to roll pastry.
- Step 2On lightly floured surface, unfold puff pastry and roll to 9- by 10-inch rectangle. Cut rectangle in half lengthwise to create two 5- by 9-inch rectangles. Repeat with remaining sheet of pastry to make 4 rectangles total. Divide pork equally among pastry rectangles, arranging along 1 long side of each rectangle, then shape sausage into logs about 1 inch in diameter.
- Step 3Brush opposite side of each rectangle with some beaten egg (reserve remaining for baking) and roll over sausage to seal. Transfer seam side down to parchment-lined baking sheet and freeze until slightly firm, about 20 minutes.
- Step 4Heat oven to 400°F. Cut each sausage roll crosswise into 6 pieces (each about 11/2 inches thick); return half, seam side down, to same baking sheet and repeat with remaining rolls on second parchment-lined baking sheet. Brush just surface of pastry with remaining egg wash and bake, rotating and swapping positions of pans halfway through, until pastry is golden brown and sausage is cooked through, 24 to 28 minutes.
- Step 5Meanwhile, in small bowl, stir together apple butter and mustard. Serve with sausage rolls.
Air fryer directions: Heat air fryer to 350°F. Line air fryer basket with parchment paper and cook sausage rolls, in batches, 6 minutes. Remove parchment paper and continue air-frying until sausage is cooked through and pastry is golden, 6 minutes.
Dazzling Dip
Dunk sausage rolls into a sweet-savory sauce: Combine 1/4 cup apple butter and 3 tablespoons Dijon mustard. So simple!
