Buffalo Cauliflower Bites
Don't forget the dip!

You won’t even miss the meat in these spicy, saucy, crowd-pleasing cauliflower bites made in the air fryer that are sure to elevate any appetizer spread. Rice flour and cornstarch ensure delightfully crispy pieces of cauli that are tossed in Buffalo sauce and served alongside a tangy blue cheese dip. Go team!
Ingredients
Dip
- 3/4 cup
sour cream
- 2 tsp.
lemon juice
- 1/4 tsp.
kosher salt
- 1/4 tsp.
pepper
- 1/2 tsp.
buffalo wing sauce (we used Frank’s)
- 1
large scallion, finely chopped
- 1 1/2 oz.
crumbled blue cheese (1/3 cup), plus more for topping
Buffalo sauce
- 1/3 cup
buffalo wing sauce (we used Frank’s)
- 1 Tbsp.
canola oil
- 1/2 tsp.
honey
Cauliflower
- 1/2 cup
rice flour
- 1/4 cup
cornstarch
- 1/4 tsp.
baking powder
- 1/4 tsp.
kosher salt
- 1/2 cup
plus 2 tablespoons cold seltzer
- 1
2-pound head cauliflower, trimmed and cut into 1 1/2-inch florets (about 7 cups)
Canola oil, for brushing
Cucumber spears and/or celery sticks, for serving
Directions
- Step 1Make dip: In bowl, combine all ingredients; refrigerate until ready to use.
- Step 2Make buffalo sauce: In large bowl, whisk together all ingredients; set aside.
- Step 3Make cauliflower: Heat air fryer to 400°F. In another large bowl, whisk together rice flour, cornstarch, baking powder, and salt. Whisk in seltzer. Add cauliflower and toss to coat.
- Step 4Brush air fryer basket with oil. Working in 2 batches, add cauliflower and cook, shaking basket after 10 minutes, until crispy, 15 minutes total. Transfer to plate. When second batch is done, leave in basket and top with first batch of cauliflower; cook 2 minutes to reheat.
- Step 5Transfer cauliflower to buffalo sauce and toss to coat. Serve immediately with dip, cucumbers, celery, and extra blue cheese if desired.
