A flavor bomb spice paste takes cauliflower from good to “can’t-get-enough” great—each bite boasts savory-sweet depth for a roasted veg dish that’s anything but an afterthought.
Ingredients
- 1 cup
long-grain white rice
- 2 Tbsp.
olive oil
- 1 Tbsp.
red wine vinegar
- 1 Tbsp.
tomato paste
- 2 tsp.
garam masala
- 1 tsp.
brown sugar or honey
- 1/8 tsp.
cayenne
Kosher salt
- 1
medium head cauliflower (about 2 lbs), cut into florets
- 6
cloves garlic, smashed
- 1
onion, cut into 1/2-in.-thick wedges
- 1/2 lb.
green beans, trimmed and halved
Chopped cilantro, for serving
Directions
- Step 1Heat oven to 425°F. Cook rice per package directions.
- Step 2In large bowl, whisk together oil, vinegar, tomato paste, garam masala, brown sugar or honey, cayenne, and 1/2 teaspoon salt.
- Step 3Add cauliflower and toss to coat. Toss with garlic and onion. Arrange on rimmed baking sheet and roast 18 minutes.
- Step 4Add green beans to sheet and toss to combine. Continue roasting until vegetables are tender, 10 to 12 minutes more. Sprinkle with cilantro and serve with rice.
AIR FRYER INSTRUCTIONS: Heat air fryer to 370°F. Add cauliflower to bowl with oil, honey and spices; toss to coat. Toss with garlic and onion. Transfer to air-fryer basket and air-fry until beginning to roast, 8 minutes. Add green beans to basket and toss to combine. Continue air-frying until vegetables are tender and roasted, 5 minutes more. Transfer to platter, sprinkle with cilantro and serve with rice.
