Break out of your salad rut with this winter edition featuring beautiful, bracing greens in a bright, honey-laced Dijon dressing.

Ingredients
- 3 Tbsp.
lemon juice
- 1 tsp.
honey
Kosher salt and pepper
- 2 tsp.
Dijon mustard
- 1/2
medium red onion, finely chopped
- 1/4 cup
olive oil
- 1
15-oz can white beans, drained and rinsed
- 2
small heads radicchio, torn
- 2
heads endive, sliced
- 2 cups
flat-leaf parsley leaves
- 2 oz.
Parmesan cheese, shaved, divided
Directions
- Step 1In large bowl, whisk together lemon juice, honey, and 3/4 teaspoon salt until incorporated. Whisk in Dijon, then stir in onion and let sit 5 minutes.
- Step 2Whisk in oil and 1/2 teaspoon pepper and gently toss with beans.
- Step 3Add radicchio, endive, parsley, and half of cheese and toss to combine. Serve topped with remaining cheese.
