Ingredients

14-ounce cans artichoke hearts, halved and patted very dry

lemon
- 1 tsp.
fresh thyme leaves
Kosher salt and pepper
Directions
Heat oven to 425°F. Spread oil onto rimmed baking sheet and arrange artichokes, cut sides down, on sheet. Roast on bottom rack until golden brown, 10 to 12 minutes. Zest lemon all over artichokes, sprinkle with thyme and 1/4 teaspoon each salt and pepper, and toss to combine.
