Grilled Cabbage Wedges With Creamy Caraway Dressing

Charring the cabbage causes it to caramelize, amping up it natural sweetness while adding a hint of smokiness. Serve big wedges alongside grilled chicken or pork.

Ingredients
- 1 Tbsp.
fresh lemon juice
- 1/2 tsp.
sugar
Kosher salt and pepper
- 1/4 cup
mayonnaise
- 2 Tbsp.
whole-milk yogurt
- 1/4 tsp.
celery seed
- 1/4 tsp.
caraway seed
- 1
small green cabbage (about 2 pounds)
- 1 Tbsp.
olive oil
Chopped parsley, sliced scallions, and cooked bacon, for serving
Directions
- Step 1Heat grill to medium-high. In bowl, whisk together lemon juice, sugar and 1/2 teaspoon salt to dissolve. Whisk in mayonnaise, yogurt, celery, and caraway seeds and 1/4 teaspoon pepper.
- Step 2Cut cabbage into 8 wedges, leaving core intact. Brush cabbage with oil, then place flat side down and grill until charred and just tender, 5 to 7 minutes per side; transfer to platter.
- Step 3Drizzle cabbage with dressing, then sprinkle with parsley, scallions, and bacon if desired.
