Take air fryer chicken wings to the next level with a sweet 'n' salty marinade featuring fish sauce, lime juice, brown sugar and garlic. Smoky shishito peppers make the perfect partner.
Ingredients
- 3 Tbsp.
fish sauce, divided
- 2 Tbsp.
lime juice, divided
- 1 Tbsp.
plus 1 teaspoon packed brown sugar, divided
- 4
cloves garlic, 2 pressed and 2 thinly sliced
- 2 lb.
chicken wings
- 1/2 lb.
shishito peppers
- 2 Tbsp.
plus 2 teaspoons canola oil
Kosher salt
- 1
small red chile, thinly sliced
Chopped cilantro and torn basil, for serving
Directions
- Step 1In large bowl, whisk together 2 tablespoons fish sauce, 1 tablespoon lime juice, and 1 tablespoon brown sugar to dissolve, then stir in pressed garlic and toss with wings. Refrigerate at least 1 hour and up to 3 hours.
- Step 2Heat air fryer on 400°F. Transfer wings to air fryer (discard marinade), set timer to 15 minutes, press Start and cook 8 minutes.
- Step 3Toss shishito peppers with 2 tsp oil and 1/4 teaspoon salt. Flip wings, scatter shishito peppers around wings, and continue cooking until wings are cooked through and peppers are browned in spots, 7 minutes more. Transfer to platter.
- Step 4Meanwhile, in small skillet, heat remaining 2 tablespoons oil and sliced garlic on low, stirring, 4 minutes. Add chile and cook until garlic is golden brown and crisp, about 3 minutes more. Remove from heat and stir in remaining lime juice, fish sauce, and brown sugar. Spoon over wings and peppers and sprinkle with herbs

TEST KITCHEN TIP: No air fryer? Fire up the grill instead! Heat grill to low. Place wings, bone sides down, on grill and grill, covered, 10 minutes. Flip and continue grilling until cooked through, 10 to 15 minutes more. Grill shishitos on medium-high, flipping once, until charred, 4 to 6 minutes total.
