Waffles With Spicy Glazed Bacon and Pecans
Now you don't have to choose between sweet and savory.

Drizzle a maple syrup–Tabasco sauce on crispy bacon and toasted pecans to create the ultimate waffle topper.
Ingredients
For Maple Butter
- 1/2 cup
(1 stick) unsalted butter, at room temperature
- 2 Tbsp.
maple syrup
- 1/2
to 1 teaspoon Tabasco sauce or other pepper sauce
For Waffles
- 1 3/4 cups
all-purpose flour
- 1 1/2 tsp.
baking powder
- 1 tsp.
baking soda
- 1/2 tsp.
kosher salt
- 2 cups
low-fat buttermilk
- 2
large eggs
- 3 Tbsp.
sugar
- 3 Tbsp.
vegetable oil
- 1 Tbsp.
pure vanilla extract
Sliced bananas, for serving
For Glazed Bacon
- 1/4 cup
maple syrup
- 1
to 2 teaspoons Tabasco sauce or other pepper sauce
- 4
slices bacon
- 1/2 cup
pecans, roughly chopped
Directions
- Step 1Heat oven to 225°F. Make maple butter: In small bowl, combine butter, syrup, and Tabasco sauce; set aside.
- Step 2Make waffles: Preheat waffle maker. In large bowl, whisk together flour, baking powder, baking soda, and salt.
- Step 3 In medium bowl, whisk buttermilk, eggs, sugar, oil, and vanilla. Add buttermilk mixture to flour mixture. Stir until just combined (small lumps are OK).
- Step 4Spray waffle maker with nonstick cooking spray. Add 1/2 cup batter to waffle maker and cook until golden brown and crisp, 2 to 5 min. Keep warm by placing directly onto oven rack. Repeat with remaining batter.
- Step 5Make glazed bacon: Combine syrup and Tabasco sauce. In large cast-iron skillet on medium, cook bacon until crisp, 5 to 6 minutes. Drain on paper towels; let cool, then break into pieces.
- Step 6Wipe out skillet; return to medium heat. Cook pecans, tossing occasionally, until just beginning to brown, about 2 minutes. Toss with bacon, then drizzle with syrup mixture and toss to coat. Transfer to bowl and let cool.
- Step 7Serve hot waffles with maple butter, sliced bananas, and bacon pecans.
