Gingery Chicken & Spinach Stir-Fry

Ingredients
- 2 Tbsp.
canola oil
- 2
cloves garlic, chopped
- 1 Tbsp.
grated fresh ginger
- 1 1/4 lb.
boneless, skinless chicken thighs, trimmed and cut into 1-in. pieces
- 2 Tbsp.
yellow or white miso
- 10 oz.
baby spinach
cooked brown or wild rice, for serving
Directions
- Step 1Heat oil in large deep skillet on medium. Add garlic and ginger and cook, stirring 2 minutes.
- Step 2Add chicken, season with 1/4 teaspoon each salt and pepper and cook, tossing occasionally until beginning to brown, 3 to 4 minutes.
- Step 3In a small bowl, whisk together miso and 2 tablespoons water.
- Step 4Add miso mixture to skillet, then add spinach and cook, stirring and tossing occasionally, until beginning to wilt, 2 to 3 minutes.
- Step 5Serve chicken and spinach with cooked rice, if desired.
