Crunchy Bulgur Lettuce Cups

Whip up these handheld lettuce cups for a fun and healthy meal.

Ingredients
- extra-virgin olive oil
- 1 large shallot, finely chopped
- 6 oz. shiitake mushrooms, stemmed and sliced
- 3 Tbsp. Champagne vinegar
- 2 cups cooked bulgur
- 1/4 cup finely chopped mint
- Kosher salt
- Small lettuce cups
- 1/2 cup roasted salted almonds, chopped
Directions
- Step 1In a 10" skillet, heat 2 tablespoons olive oil on medium. Add shallot and cook 3 minutes, stirring. Add mushrooms and cook 5 minutes more. Add champagne vinegar and remove from heat, scraping up browned bits.
- Step 2Toss with bulgur, mint, 2 tablespoons olive oil, and 1 teaspoon salt. Spoon into lettuce cups. Top with chopped almonds and serve.
