Make Penne With Spicy Anchovy Marinara
- Step 1Bring large pot of water to a boil.
- Step 2In large skillet on medium, heat oil, anchovies, garlic, chile, oregano, capers, and fennel. Cook, stirring often, until garlic begins to turn golden brown, 2 to 3 minutes.
- Step 3Add tomatoes and simmer 5 minutes.
- Step 4Add pasta to boiling water and cook 2 minutes. Reserve 1/2 cup pasta water.
- Step 5Transfer pasta to skillet with sauce along with 1/4 cup reserved pasta water and toss to combine. Cook until pasta is just tender, about 1 minute, adding additional reserved water to loosen sauce as desired. Toss with pecorino and parsley.
GH Test Kitchen Tip: The dough may look crumbly in the machine, but don’t add extra liquid! A drier dough will be extruded from the machine well, creating smooth and tender noodles. Extra moisture will cause the pasta to stick together.
