The secret to Blondie-baking success is brown sugar. So even though these Blondies don't contain chocolate, they get plenty of flavor from dark brown sugar and vanilla extract. You can substitute for light brown sugar if that's all you've got, the flavor will just be slightly more mild. One more tip—bake an extra batch if you're making these for a crowd. They won't last long!
Ingredients
Nonstick cooking spray, for pan
- 1 1/4 cups
all-purpose flour
- 1/2 tsp.
baking powder
- 1/4 tsp.
kosher salt
- 1/2 cup
(1 stick) unsalted butter, at room temperature
- 1/3 cup
packed dark brown sugar
- 1/4 cup
granulated sugar
- 1
large egg
- 2 tsp.
pure vanilla extract
Directions
- Step 1Heat oven to 350°F. Lightly coat an 8-inch square pan with cooking spray. In a medium bowl, whisk together the flour, baking powder and salt.
- Step 2Using an electric mixer, beat butter and sugars until light, 2 minutes. Beat in egg and then vanilla.
- Step 3Reduce the speed to low and gradually add the flour mixture, beating until incorporated.
- Step 4Spread the batter into the prepared pan. Bake until beginning to brown around edges 15 to 18 minutes.
- Step 5Let the blondies cool completely in the pan before cutting into pieces.
