Ingredients
- 2 Tbsp. olive oil
- 2 lb. chicken legs and thighs
- 1/2 tsp. salt
- 1 large onion, sliced
- 1 cup pitted green olives
- 1 Spicy Cinnamon Preserved Lemon, sliced (link to recipe above)
- 1 cup chicken broth
- parsley
- pepper
Directions
- Step 1In large skillet, heat olive oil on medium-high. Cook chicken, sprinkled with salt, 4 minutes per side. Set aside.
- Step 2Add onion and green olives. Cook 4 minutes.
- Step 3Add Spicy Cinnamon Preserved Lemon, chicken broth, and chicken. Cover; cook on medium 15 minutes, until chicken is cooked.
- Step 4Top with parsley and pepper.
