Choco-Caramel Matzo Brittle

Ingredients
- 5
sheets matzo
- 1 cup
(2 sticks) butter
- 1/2 cup
granulated sugar
- 1/2 cup
packed light brown sugar
- 2 Tbsp.
cider vinegar
- 2 tsp.
vanilla extract
- 8 oz.
dark chocolate, chopped
- 1/2 cup
salted roasted almonds, chopped
Directions
- Step 1Line large rimmed baking sheet with aluminum foil; lightly coat with nonstick cooking spray. Arrange matzo on pan in single layer, breaking into pieces to fit if necessary.
- Step 2In microwave-safe large glass bowl, microwave butter on High 1 minute or until melted. Whisk in sugars, vinegar and vanilla until smooth. Microwave, uncovered, on High 6 minutes in 2-minute intervals, whisking after each interval. Microwave 3 to 4 minutes more in 1-minute intervals until dark amber.
- Step 3Carefully remove caramel from microwave; pour over matzo in pan. Spread caramel into thin layer using offset spatula. Let cool 15 minutes or until caramel hardens completely.
- Step 4Meanwhile, in microwave-safe medium bowl, microwave chocolate, covered with waxed paper, on High 1 to 2 minutes or until almost melted, stirring once. Remove from microwave and stir until smooth. Pour over caramel layer; spread into thin layer using spatula. Sprinkle with almonds.
- Step 5Refrigerate 20 minutes or until chocolate layer hardens; break into pieces. Makes about 1 1/2 pounds brittle.
