Ingredients
- 1 Tbsp. oil
- 6 oz. cremini mushrooms, sliced
- 1/4 tsp. salt
- 1/2 cup salsa
- 1/2 cup frozen corn
- 4 8-inch flour tortillas
- Cooking spray
- 1 cup Shredded Monterey Jack cheese
- sour cream
Directions
- Step 1In 10-inch skillet, heat 1 tablespoon oil on medium heat.
- Step 2Add cremini mushrooms and salt. Cook 4 minutes.
- Step 3Stir in salsa and frozen corn. Cook 2 minutes.
- Step 4Arrange flour tortillas on large cookie sheet sprayed with cooking spray. Divide mushrooms among tortillas; top with Monterey Jack cheese.
- Step 5Fold tortillas over to form half-moons; spray tops. Bake in 475 degrees F oven 6 minutes. Turn quesadillas over; bake another 6 minutes.
- Step 6Garnish with sour cream.
