Red Pepper and Tomato Soup

Ingredients
- 1 cup
chopped onion
- 1 tsp.
finely chopped garlic (about 1 small clove)
- 1
28-oz can tomatoes
- 5
roasted red peppers
- 4 cups
vegetable stock
Kosher salt and pepper
Finely grated orange zest and crème fraiche, for serving
Directions
- Step 1In a large pot on low, cook the onion and garlic until tender.
- Step 2Add the tomatoes, roasted red peppers and vegetable stock and season with salt and pepper to taste. Simmer until flavors have melded, about 25 minutes, then puree until smooth. To serve, top with orange zest and crème fraiche.
